This is a magic recipe if you love duck and it is so easy it’s embarrassing to admit it! Don’t tell them even if they beg.
Serves 2 people
2 duck breasts (approx. 200gm each)
4 firm plums, medium to large in size
1 medium bunch of seedless grapes, any colour and loose
1 x bottle Petra Apple Balsamic (West Australian)
6 x whole cloves
1 x cinnamon stick
2 x star anise
Salt & Pepper
Extra Virgin Olive Oil (EVOO)
Put one tablespoon of EVOO in a hot frypan then add the cloves to the oil. Immediately place the seasoned duck breasts skin side down on top of the cloves and cook at a medium heat for 6 – 8 minutes skinside down. Now turn the breasts and cook the flesh side for 2 minutes then cover pan and rest off the heat. In a second pan put 50ml of EVOO and on medium heat add the cinnamon stick, star anise and wedges of plum. Now add 100ml of water and grapes, or grapes and 100ml water OK too. Cook for 2 – 3 minutes then add 50 – 100ml Petra Apple Balsamic, stirring and cooking for 2 more minutes then take off heat.
Slice your hot duck breasts into thin slices on a serving plate then surround with cooked fruit. Make sure no cloves, star anise or the cinnamon stick are served (discard them).
